Yield of cane sugar

For each ton of straw produced is entirely possible to get 600 liters of juice or grape sugar which in turn can result in 120 gallons of spirits at 50 GL
In our Alembic 200 liters yield is about 40 liters for "Lambic" of brandy to 50 GL.

Income bagasse

Overall, 100 kg of grapes originate between 70 and 75 liters of wine and 25 to 30 Kgs of waste fermentation, also called bagasse.
The average yield of bagasse, considering the distillate (brandy) to 50 ° GL, is approximately 10 liters per 100 kg of bagasse.
The yield is variable depending on the type of residue and the alcohol content. It is, in practice, that from 100 kg of bagasse is possible to extract many liters brandy 50 ° GL, as was the volume of the wine from that grape.

The fermentation is natural and lasts between thirty to sixty days. The tanks should be covered with crushed fruit to avoid contact with air. You need to add one part water to five pieces of fruit. After fermentation the product should be kept for sixty days and well protected from the air. This product can be distilled in stills and in distilleries.
